Ingredients

  • Canned lychee in syrup - 200 grams (drained weight)
  • Unsweetened coconut milk - 100 ml
  • Agar-agar powder - 2 grams
  • Erythritol - 2 tablespoons (30 grams)
  • Water - 200 ml
  • Vanilla extract - 1 teaspoon

Steps

  1. In a small saucepan, combine 200 ml of water and 2 grams of agar-agar powder. Stir well to dissolve the agar-agar.
  2. Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, reduce the heat and simmer for 2 minutes.
  3. Add 100 ml of unsweetened coconut milk, 30 grams of erythritol, and 1 teaspoon of vanilla extract to the saucepan. Stir until the erythritol is fully dissolved.
  4. Remove the saucepan from heat and let the mixture cool for about 5 minutes.
  5. Chop the drained lychee into small pieces and divide them evenly between two serving molds or bowls.
  6. Pour the agar-agar mixture over the chopped lychee in the molds, ensuring the fruit is evenly distributed.
  7. Allow the jelly to cool at room temperature for about 10 minutes before transferring to the refrigerator.
  8. Chill in the refrigerator for at least 2 hours or until set.
  9. Once set, carefully unmold the jelly and serve chilled.
