- Erythritol - 2 tablespoons (30 grams)
- Water - 200 ml
- Vanilla extract - 1 teaspoon
Steps
- In a small saucepan, combine 200 ml of water and 2 grams of agar-agar powder. Stir well to dissolve the agar-agar.
- Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, reduce the heat and simmer for 2 minutes.
- Add 100 ml of unsweetened coconut milk, 30 grams of erythritol, and 1 teaspoon of vanilla extract to the saucepan. Stir until the erythritol is fully dissolved.
- Remove the saucepan from heat and let the mixture cool for about 5 minutes.
- Chop the drained lychee into small pieces and divide them evenly between two serving molds or bowls.
- Pour the agar-agar mixture over the chopped lychee in the molds, ensuring the fruit is evenly distributed.
- Allow the jelly to cool at room temperature for about 10 minutes before transferring to the refrigerator.
- Chill in the refrigerator for at least 2 hours or until set.
- Once set, carefully unmold the jelly and serve chilled.
