- Erythritol sweetener - 30 grams

Steps
- Rinse the dried lotus seeds under cold water and soak them in clean water for at least 4 hours or overnight.
- After soaking, drain the lotus seeds and place them in a pot with 500 ml of fresh water. Bring to a boil and then reduce the heat to a simmer, cooking for about 30 minutes or until the seeds are tender.
- Once tender, drain the lotus seeds and transfer them to a blender. Add the coconut milk, erythritol sweetener, vanilla extract, and a pinch of salt.
- Blend the mixture until smooth. If the paste is too thick, add a little more coconut milk to reach your desired consistency.
