- Zucchini - 2 medium
- Chicken breast - 200 grams, sliced thinly
- Soy sauce (or tamari for gluten-free) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Bell pepper - 1 medium, sliced
- Mushrooms - 100 grams, sliced
- Green onions - 2, chopped
- Egg - 1, beaten
- Red pepper flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles. Set aside.
- In a large skillet or wok, heat the sesame oil over medium-high heat. Add the sliced chicken breast and cook until browned and fully cooked, about 5-7 minutes.
- Add the minced garlic and grated ginger to the skillet, stirring for about 30 seconds until fragrant.
- Add the sliced bell pepper and mushrooms to the skillet, cooking until they soften, about 3-4 minutes.
- Push the chicken and vegetables to one side of the skillet and pour the beaten egg into the empty side. Scramble the egg until fully cooked and then mix it with the rest of the ingredients.
- Add the zucchini noodles to the skillet, followed by the soy sauce, green onions, and red pepper flakes if using. Toss everything together and cook for an additional 2-3 minutes until the zucchini noodles are just tender.
- Season with salt and black pepper to taste, then serve immediately.
