Ingredients

  • Cauliflower - 400 grams (for crust)
  • Shredded mozzarella cheese - 200 grams
  • Cream cheese - 100 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cooked chicken breast - 200 grams, diced
  • Soy sauce (or tamari) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Szechuan peppercorns - 1/2 teaspoon, crushed
  • Red bell pepper - 1/2, diced
  • Green onions - 2, chopped
  • Peanuts - 30 grams, chopped
  • Sesame oil - 1 teaspoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a food processor, pulse the cauliflower until it resembles rice. Steam it for about 5 minutes, then let it cool.
  3. Squeeze out excess moisture from the steamed cauliflower using a clean kitchen towel.
  4. In a mixing bowl, combine the cauliflower, mozzarella cheese, cream cheese, egg, garlic powder, Italian seasoning, and salt. Mix until a dough forms.
  5. Spread the cauliflower dough onto a parchment-lined baking sheet, forming a pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
  7. While the crust is baking, heat a pan over medium heat. Add sesame oil, then stir-fry the diced chicken for 3-4 minutes until heated through.
  8. Add soy sauce, rice vinegar, crushed Szechuan peppercorns, diced red bell pepper, and half of the green onions to the pan. Stir-fry for another 2-3 minutes.
  9. Once the crust is done, remove it from the oven and evenly distribute the chicken mixture over the crust.
  10. Sprinkle chopped peanuts and remaining green onions on top.
  11. Return the pizza to the oven and bake for an additional 5-7 minutes.
  12. Remove from the oven, slice, and serve hot.
