Ingredients
- Cauliflower - 400 grams (for crust)
- Shredded mozzarella cheese - 200 grams
- Cream cheese - 100 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Cooked chicken breast - 200 grams, diced
- Soy sauce (or tamari) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Szechuan peppercorns - 1/2 teaspoon, crushed
- Red bell pepper - 1/2, diced
- Green onions - 2, chopped
- Peanuts - 30 grams, chopped
- Sesame oil - 1 teaspoon
Steps
- Preheat the oven to 220°C (425°F).
- In a food processor, pulse the cauliflower until it resembles rice. Steam it for about 5 minutes, then let it cool.
- Squeeze out excess moisture from the steamed cauliflower using a clean kitchen towel.
- In a mixing bowl, combine the cauliflower, mozzarella cheese, cream cheese, egg, garlic powder, Italian seasoning, and salt. Mix until a dough forms.
- Spread the cauliflower dough onto a parchment-lined baking sheet, forming a pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
- While the crust is baking, heat a pan over medium heat. Add sesame oil, then stir-fry the diced chicken for 3-4 minutes until heated through.
- Add soy sauce, rice vinegar, crushed Szechuan peppercorns, diced red bell pepper, and half of the green onions to the pan. Stir-fry for another 2-3 minutes.
- Once the crust is done, remove it from the oven and evenly distribute the chicken mixture over the crust.
- Sprinkle chopped peanuts and remaining green onions on top.
- Return the pizza to the oven and bake for an additional 5-7 minutes.
- Remove from the oven, slice, and serve hot.
