Ingredients

  • Chicken breast - 300 grams, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce (or coconut aminos) - 3 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Swerve (or erythritol) - 1 teaspoon
  • Red pepper flakes - 1 teaspoon (adjust to taste)
  • Peanuts - 30 grams, unsalted
  • Green onions - 2, chopped
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, combine the diced chicken, 1 tablespoon of soy sauce, and a pinch of salt. Let it marinate for 10 minutes.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and ginger to the skillet and stir-fry for an additional minute until fragrant.
  4. Add the diced bell pepper and zucchini to the skillet, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together the remaining soy sauce, rice vinegar, sesame oil, Swerve, and red pepper flakes to create the sauce.
  6. Pour the sauce over the chicken and vegetables in the skillet. Stir well to coat all ingredients and cook for another 2-3 minutes until heated through.
  7. Remove from heat and stir in the peanuts and chopped green onions before serving. Enjoy your Keto Kung Pao Chicken!
