Ingredients
- Large eggs - 4
- Almond flour - 30g
- Pork sausage - 100g, crumbled
- Green onions - 2, finely chopped
- Sesame oil - 1 tablespoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Cabbage - 50g, finely shredded
- Cheddar cheese - 50g, shredded
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, whisk together the eggs, almond flour, salt, and black pepper until smooth to form the crepe batter.
- Heat a non-stick skillet over medium heat and add a teaspoon of sesame oil.
- Pour half of the egg batter into the skillet, swirling to coat the bottom evenly. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown. Carefully flip and cook for another minute, then remove and set aside. Repeat with the remaining batter to make a second crepe.
- In the same skillet, add the crumbled pork sausage and cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
- To assemble, place one egg crepe on a plate. Layer half of the cooked sausage, shredded cabbage, chopped green onions, and cheddar cheese on one half of the crepe.
- Drizzle with soy sauce, then fold the crepe over to enclose the filling. Repeat with the second crepe.
