Ingredients

  • Cauliflower - 300 grams (riced)
  • Egg - 1 large
  • Mozzarella cheese - 100 grams (shredded)
  • Parmesan cheese - 30 grams (grated)
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Bell pepper - 50 grams (sliced)
  • Mushrooms - 50 grams (sliced)
  • Zucchini - 50 grams (sliced)
  • Cooked chicken breast - 100 grams (diced)
  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Chili oil - 1 teaspoon
  • Green onions - 2 tablespoons (chopped)
  • Sesame seeds - 1 teaspoon (for garnish)
  • Fresh cilantro - for garnish (optional)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a clean kitchen towel, squeeze out excess moisture from the riced cauliflower.
  3. In a mixing bowl, combine the riced cauliflower, egg, mozzarella cheese, and Parmesan cheese until a dough forms.
  4. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1.5 cm thick.
  5. Bake the crust in the preheated oven for 15 minutes, or until golden brown.
  6. While the crust is baking, heat olive oil in a pan over medium heat and sauté minced garlic and ginger until fragrant.
  7. Add the sliced bell pepper, mushrooms, and zucchini to the pan and stir-fry for about 5 minutes until tender.
  8. Stir in the diced cooked chicken, soy sauce, and chili oil, cooking for an additional 2-3 minutes until heated through.
  9. Remove the crust from the oven and top it with the hot pot mixture, spreading it evenly.
