Ingredients

  • Chicken broth - 500 ml
  • Shiitake mushrooms - 50 g, sliced
  • Firm tofu - 100 g, cubed
  • Egg - 1, beaten
  • Cabbage - 50 g, shredded
  • Green onions - 2, chopped
  • Rice vinegar - 2 tbsp
  • Soy sauce (or tamari) - 1 tbsp
  • Szechuan peppercorns - 1 tsp, crushed
  • Chili paste - 1 tsp
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Sesame oil - 1 tsp
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, bring the chicken broth to a boil over medium heat.
  2. Add the sliced shiitake mushrooms and shredded cabbage, and simmer for about 5 minutes until softened.
  3. Stir in the cubed tofu, minced garlic, and grated ginger, and cook for another 3 minutes.
  4. Add the rice vinegar, soy sauce, Szechuan peppercorns, chili paste, and season with salt and black pepper to taste.
  5. Slowly pour in the beaten egg while stirring the soup gently to create egg ribbons.
  6. Remove from heat and drizzle with sesame oil and garnish with chopped green onions before serving.
