- Chicken broth - 500 ml
- Shiitake mushrooms - 50 g, sliced
- Firm tofu - 100 g, cubed
- Egg - 1, beaten
- Cabbage - 50 g, shredded
- Green onions - 2, chopped
- Rice vinegar - 2 tbsp
- Soy sauce (or tamari) - 1 tbsp
- Szechuan peppercorns - 1 tsp, crushed
- Chili paste - 1 tsp
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, grated
- Sesame oil - 1 tsp
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, bring the chicken broth to a boil over medium heat.
- Add the sliced shiitake mushrooms and shredded cabbage, and simmer for about 5 minutes until softened.
- Stir in the cubed tofu, minced garlic, and grated ginger, and cook for another 3 minutes.
- Add the rice vinegar, soy sauce, Szechuan peppercorns, chili paste, and season with salt and black pepper to taste.
- Slowly pour in the beaten egg while stirring the soup gently to create egg ribbons.
- Remove from heat and drizzle with sesame oil and garnish with chopped green onions before serving.
