Ingredients

  • Chicken breast - 200g, sliced into thin strips
  • Soy sauce (or tamari for gluten-free) - 3 tablespoons
  • Rice vinegar - 2 tablespoons
  • Sriracha - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 2 stalks, sliced
  • Red bell pepper - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100g, sliced
  • Cilantro - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles. Set aside.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
  3. Add the sliced chicken breast to the skillet, season with salt and black pepper, and cook until browned and fully cooked, approximately 5-7 minutes.
  4. Stir in the sliced red bell pepper and mushrooms, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. In a small bowl, combine the soy sauce, rice vinegar, and sriracha. Pour the sauce over the chicken and vegetables in the skillet, stirring to coat evenly.
  6. Add the zucchini noodles to the skillet, tossing everything together for about 2-3 minutes until the noodles are heated through but still al dente.
