- Rice vinegar - 2 tablespoons
- Sriracha - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, sliced
- Red bell pepper - 1 medium, sliced
- Mushrooms (shiitake or button) - 100g, sliced
- Cilantro - for garnish
- Salt - to taste

Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles. Set aside.
- In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
- Add the sliced chicken breast to the skillet, season with salt and black pepper, and cook until browned and fully cooked, approximately 5-7 minutes.
- Stir in the sliced red bell pepper and mushrooms, cooking for an additional 3-4 minutes until the vegetables are tender.
- In a small bowl, combine the soy sauce, rice vinegar, and sriracha. Pour the sauce over the chicken and vegetables in the skillet, stirring to coat evenly.
- Add the zucchini noodles to the skillet, tossing everything together for about 2-3 minutes until the noodles are heated through but still al dente.
- Remove from heat, garnish with sliced green onions and cilantro, and serve immediately.
