Ingredients

  • Almond flour - 150g
  • Psyllium husk - 10g
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Water - 100ml
  • Egg - 1 large
  • Ground pork - 300g
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, grated
  • Soy sauce (or tamari for gluten-free) - 1 tbsp
  • Sesame oil - 1 tsp
  • Green onions - 2, chopped
  • Red cabbage - 100g, shredded
  • Cucumber - 1/2, sliced
  • Mayonnaise - 2 tbsp

Steps

  1. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  2. In a separate bowl, whisk together water and egg, then add to the dry mixture and knead until a dough forms.
  3. Divide the dough into 4 equal portions and shape each into a small patty.
  4. In a skillet over medium heat, cook the patties for about 5 minutes on each side until golden brown and cooked through.
  5. In another bowl, mix ground pork, garlic, ginger, soy sauce, sesame oil, and green onions until well combined.
  6. Form the pork mixture into small patties and cook in the same skillet for 6-7 minutes on each side until fully cooked.
  7. To assemble, place a pork patty between two almond flour patties, top with shredded cabbage, cucumber slices, and a dollop of mayonnaise.
