Ingredients

  • Cream cheese - 100g
  • Heavy cream - 100ml
  • Granulated erythritol - 30g
  • Matcha green tea powder - 2g
  • Vanilla extract - 1 tsp
  • Almond flour - 30g
  • Butter - 30g
  • Egg - 1 large

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, combine almond flour and melted butter, then press the mixture into the bottom of a small springform pan to form the crust.
  3. In another bowl, beat the cream cheese until smooth, then add the erythritol, vanilla extract, and egg, mixing until well combined.
  4. Add the heavy cream and matcha powder to the cream cheese mixture, and blend until the matcha is fully incorporated and the mixture is smooth.
  5. Pour the cheesecake filling over the crust in the springform pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 20-25 minutes, or until the center is set but slightly jiggly.
