Ingredients

  • Soy sauce (or coconut aminos) - 3 tablespoons
  • Sriracha - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Peanuts (unsalted) - 30 grams, chopped
  • Rice vinegar - 1 tablespoon
  • Xanthan gum - 1/2 teaspoon (to thicken sauce)
  • Black pepper - to taste

Steps

  1. In a bowl, mix the diced chicken with soy sauce, sriracha, and black pepper. Let it marinate for 15 minutes.
  2. In a large skillet over medium heat, add sesame oil. Sauté the minced garlic and ginger until fragrant, about 1 minute.
  3. Add the marinated chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
