- Chicken breast - 300 grams, diced
- Lettuce leaves (for wrapping) - 4 large leaves
- Red bell pepper - 1 medium, diced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (or coconut aminos) - 3 tablespoons
- Sriracha - 1 tablespoon
- Sesame oil - 1 tablespoon
- Peanuts (unsalted) - 30 grams, chopped
- Rice vinegar - 1 tablespoon
- Xanthan gum - 1/2 teaspoon (to thicken sauce)
- Black pepper - to taste
Steps
- In a bowl, mix the diced chicken with soy sauce, sriracha, and black pepper. Let it marinate for 15 minutes.
- In a large skillet over medium heat, add sesame oil. Sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the marinated chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
