  • Erythritol - 60 grams
  • Coconut cream - 100 ml
  • Vanilla extract - 1 teaspoon
  • Chia seeds - 2 tablespoons

Steps

  1. In a small saucepan, combine the grated ginger and water. Bring to a boil over medium heat, then reduce the heat and let it simmer for 10 minutes.
  2. Strain the ginger-infused water into a clean bowl, discarding the solids. Return the liquid to the saucepan.
  3. Add erythritol to the ginger water and stir until fully dissolved. Simmer for another 5 minutes until slightly thickened.
  4. Remove from heat and let the syrup cool for a few minutes before stirring in the vanilla extract.
  5. In two small serving bowls, divide the coconut cream evenly. Drizzle the ginger syrup over the coconut cream.
  6. Sprinkle 1 tablespoon of chia seeds on top of each serving, and let it sit for 10 minutes to allow the chia seeds to absorb some moisture.
