- Cauliflower rice - 200 grams
- Eggs - 2 large
- Green onion - 2 stalks, chopped
- Bell pepper - 50 grams, diced
- Carrot - 50 grams, diced
- Soy sauce (or coconut aminos for keto) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Salt - to taste
- Black pepper - to taste
Steps
- In a large skillet or wok, heat the sesame oil over medium heat.
- Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Add the diced bell pepper and carrot, stir-fry for 3-4 minutes until they begin to soften.
- Push the vegetables to the side of the skillet and crack the eggs into the center. Scramble the eggs until fully cooked.
- Add the cauliflower rice to the skillet, mixing it with the vegetables and eggs.
- Pour the soy sauce (or coconut aminos) over the mixture, stirring well to combine.
- Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower rice is tender.
- Season with salt and black pepper to taste, and stir in the chopped green onions just before serving.
