Ingredients

  • Cauliflower rice - 200 grams
  • Eggs - 2 large
  • Green onion - 2 stalks, chopped
  • Bell pepper - 50 grams, diced
  • Carrot - 50 grams, diced
  • Soy sauce (or coconut aminos for keto) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large skillet or wok, heat the sesame oil over medium heat.
  2. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
  3. Add the diced bell pepper and carrot, stir-fry for 3-4 minutes until they begin to soften.
  4. Push the vegetables to the side of the skillet and crack the eggs into the center. Scramble the eggs until fully cooked.
  5. Add the cauliflower rice to the skillet, mixing it with the vegetables and eggs.
  6. Pour the soy sauce (or coconut aminos) over the mixture, stirring well to combine.
  7. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower rice is tender.
  8. Season with salt and black pepper to taste, and stir in the chopped green onions just before serving.
