- Eggplant - 1 medium

- Ground pork - 150 grams
- Shredded mozzarella cheese - 100 grams
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Red pepper flakes - 1/2 teaspoon (optional)
- Sesame oil - 1 teaspoon
- Salt - to taste

Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and lay them on a baking sheet lined with parchment paper.
- Brush both sides of the eggplant slices with olive oil and sprinkle with salt and pepper.
- Roast the eggplant in the preheated oven for about 15 minutes, flipping halfway through, until they are tender and slightly golden.
- While the eggplant is roasting, heat a skillet over medium heat and add a splash of olive oil.
- Add minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
- Add the ground pork to the skillet and cook until browned, breaking it apart with a spatula (about 5-7 minutes).
- Stir in soy sauce, sesame oil, and red pepper flakes (if using), and cook for another 2 minutes.
- Remove the skillet from heat and mix in chopped green onions.
- Once the eggplant is roasted, remove it from the oven and top each slice with the pork mixture and shredded mozzarella cheese.
- Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, and serve warm.
