Ingredients

  • Eggplant - 1 medium
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Ground pork - 150 grams
  • Shredded mozzarella cheese - 100 grams
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and lay them on a baking sheet lined with parchment paper.
  3. Brush both sides of the eggplant slices with olive oil and sprinkle with salt and pepper.
  4. Roast the eggplant in the preheated oven for about 15 minutes, flipping halfway through, until they are tender and slightly golden.
  5. While the eggplant is roasting, heat a skillet over medium heat and add a splash of olive oil.
  6. Add minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
  7. Add the ground pork to the skillet and cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  8. Stir in soy sauce, sesame oil, and red pepper flakes (if using), and cook for another 2 minutes.
  9. Remove the skillet from heat and mix in chopped green onions.
  10. Once the eggplant is roasted, remove it from the oven and top each slice with the pork mixture and shredded mozzarella cheese.
  11. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  12. Remove from the oven, let cool slightly, and serve warm.
