- Almond flour - 100g
- Butter - 30g, melted
- Erythritol - 20g
- Eggs - 2 large
- Coconut milk - 120ml
- Vanilla extract - 1 tsp
- Baking powder - 1/4 tsp
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, melted butter, erythritol, and a pinch of salt. Mix until a dough forms.
- Press the dough into the bottom and sides of two tartlet pans (approximately 10cm in diameter). Prick the bottoms with a fork to prevent bubbling.
- Bake the crusts in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and set aside to cool.
- In another bowl, whisk together the eggs, coconut milk, vanilla extract, and baking powder until smooth.
- Pour the egg mixture evenly into the cooled tart crusts.
- Bake in the oven for an additional 15-18 minutes, or until the custard is set and slightly jiggles in the center.
- Allow the tarts to cool for a few minutes before carefully removing them from the pans. Serve warm or chilled.
