Ingredients

  • Almond flour - 100g
  • Butter - 30g, melted
  • Erythritol - 20g
  • Eggs - 2 large
  • Coconut milk - 120ml
  • Vanilla extract - 1 tsp
  • Baking powder - 1/4 tsp
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted butter, erythritol, and a pinch of salt. Mix until a dough forms.
  3. Press the dough into the bottom and sides of two tartlet pans (approximately 10cm in diameter). Prick the bottoms with a fork to prevent bubbling.
  4. Bake the crusts in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and set aside to cool.
  5. In another bowl, whisk together the eggs, coconut milk, vanilla extract, and baking powder until smooth.
  6. Pour the egg mixture evenly into the cooled tart crusts.
  7. Bake in the oven for an additional 15-18 minutes, or until the custard is set and slightly jiggles in the center.
  8. Allow the tarts to cool for a few minutes before carefully removing them from the pans. Serve warm or chilled.
