Ingredients

  • Cauliflower (riced) - 300 grams
  • Eggs - 4 large
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Bell pepper - 100 grams, diced
  • Carrot - 50 grams, finely diced
  • Frozen peas - 50 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat a large skillet or wok over medium heat and add 1 tablespoon of sesame oil.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced bell pepper and carrot, cooking for 2-3 minutes until they begin to soften.
  4. Stir in the riced cauliflower and cook for another 3-4 minutes, stirring occasionally.
  5. Push the vegetables to one side of the skillet, then crack the eggs into the empty side and scramble them until fully cooked.
