Ingredients

  • Zucchini - 2 medium
  • Ground pork - 200 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Peanut butter (natural, unsweetened) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, sliced
  • Cilantro - 2 tablespoons, chopped
  • Crushed peanuts - 2 tablespoons (for garnish)
  • Salt - to taste

Steps

  1. Using a spiralizer, create zoodles from the zucchinis and set aside.
  2. In a skillet over medium heat, add 1 tablespoon of sesame oil and sauté the minced garlic and ginger until fragrant, about 1 minute.
  3. Add the ground pork to the skillet, breaking it apart with a spatula, and cook until browned, approximately 5-7 minutes.
  4. Stir in the soy sauce, chili oil, peanut butter, and salt, mixing well. Cook for an additional 2-3 minutes until everything is well combined.
  5. In a separate pan, heat the remaining sesame oil over medium heat and add the zoodles. Sauté for about 2-3 minutes until they are just tender but still firm.
  6. Divide the zoodles between two bowls and top with the spicy pork mixture.
  7. Garnish with sliced green onions, chopped cilantro, and crushed peanuts before serving.
