Ingredients
- Almond flour - 100g
- Eggs - 4 large
- Water - 100ml
- Salt - 1/2 tsp
- Green onions - 2 stalks, finely chopped
- Cooked chicken or pork - 150g, shredded
- Soy sauce (or coconut aminos for keto) - 1 tbsp
- Sesame oil - 1 tsp
- Avocado oil or olive oil - for frying
Steps
- In a mixing bowl, whisk together the almond flour, 2 eggs, water, and salt until smooth to form the batter.
- Heat a non-stick skillet over medium heat and lightly grease it with avocado oil.
- Pour half of the batter into the skillet, spreading it out to form a thin pancake. Cook for about 3-4 minutes until the edges start to lift and the underside is golden brown.
- Flip the pancake and cook for another 2-3 minutes on the other side. Remove from the skillet and set aside. Repeat with the remaining batter to make a second pancake.
- In a small bowl, mix the shredded chicken or pork with soy sauce and sesame oil, and stir in the chopped green onions.
- Place half of the meat mixture on one pancake, fold it over, and press gently to seal. Repeat with the second pancake.
- Serve warm, optionally garnished with extra green onions or a side of keto-friendly dipping sauce.
