Ingredients

  • Almond flour - 100g
  • Eggs - 4 large
  • Water - 100ml
  • Salt - 1/2 tsp
  • Green onions - 2 stalks, finely chopped
  • Cooked chicken or pork - 150g, shredded
  • Soy sauce (or coconut aminos for keto) - 1 tbsp
  • Sesame oil - 1 tsp
  • Avocado oil or olive oil - for frying

Steps

  1. In a mixing bowl, whisk together the almond flour, 2 eggs, water, and salt until smooth to form the batter.
  2. Heat a non-stick skillet over medium heat and lightly grease it with avocado oil.
  3. Pour half of the batter into the skillet, spreading it out to form a thin pancake. Cook for about 3-4 minutes until the edges start to lift and the underside is golden brown.
  4. Flip the pancake and cook for another 2-3 minutes on the other side. Remove from the skillet and set aside. Repeat with the remaining batter to make a second pancake.
  5. In a small bowl, mix the shredded chicken or pork with soy sauce and sesame oil, and stir in the chopped green onions.
  6. Place half of the meat mixture on one pancake, fold it over, and press gently to seal. Repeat with the second pancake.
  7. Serve warm, optionally garnished with extra green onions or a side of keto-friendly dipping sauce.
