- Coconut milk - 200 ml
- Eggs - 2 large
- Erythritol - 30 grams
- Vanilla extract - 1 teaspoon
- Coconut flour - 1 tablespoon
- Salt - a pinch
- Unsweetened shredded coconut - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, whisk together the eggs and erythritol until well combined and slightly frothy.
- Add the coconut milk, vanilla extract, coconut flour, and salt to the egg mixture. Whisk until smooth and fully incorporated.
- Pour the custard mixture into two small ramekins.
- Sprinkle the unsweetened shredded coconut evenly over the top of each ramekin.
- Place the ramekins in a baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 20 minutes, or until the custards are set and a toothpick inserted in the center comes out clean.
- Remove the ramekins from the water bath and allow them to cool slightly before serving.
