Ingredients

  • Coconut milk - 200 ml
  • Eggs - 2 large
  • Erythritol - 30 grams
  • Vanilla extract - 1 teaspoon
  • Coconut flour - 1 tablespoon
  • Salt - a pinch
  • Unsweetened shredded coconut - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the eggs and erythritol until well combined and slightly frothy.
  3. Add the coconut milk, vanilla extract, coconut flour, and salt to the egg mixture. Whisk until smooth and fully incorporated.
  4. Pour the custard mixture into two small ramekins.
  5. Sprinkle the unsweetened shredded coconut evenly over the top of each ramekin.
  6. Place the ramekins in a baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake in the preheated oven for 20 minutes, or until the custards are set and a toothpick inserted in the center comes out clean.
  8. Remove the ramekins from the water bath and allow them to cool slightly before serving.
