  • Soy sauce (or coconut aminos) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Ginger powder - 1 teaspoon
  • Five-spice powder - 1 teaspoon
  • Erythritol or another keto-friendly sweetener - 1 tablespoon
  • Black pepper - ½ teaspoon
  • Salt - ½ teaspoon
  • Collagen casing or parchment paper for wrapping - as needed

Steps

  1. In a large mixing bowl, combine the ground pork, pork fat, soy sauce, sesame oil, garlic powder, ginger powder, five-spice powder, erythritol, black pepper, and salt. Mix until fully combined.
  2. If using collagen casing, rinse it under cold water and soak for 10 minutes. If using parchment paper, cut it into strips suitable for wrapping.
  3. Stuff the mixture into the collagen casing or shape into logs and wrap tightly in parchment paper, ensuring there are no air pockets.
  4. Place the wrapped sausages in a steamer basket and steam over boiling water for 30 minutes, or until cooked through.
  5. Remove the sausages from the steamer and let them cool slightly. If desired, you can slice them and pan-fry in a little oil until crispy before serving.
