- Fresh ginger - 1 teaspoon, grated
- Red chili flakes - 1/2 teaspoon
- Green onions - 2, chopped
Steps
- Wash the Chinese cucumbers and cut them into thin slices or sticks.
- In a bowl, sprinkle the salt over the cucumber slices and let them sit for 10 minutes to draw out excess moisture.
- In another bowl, combine the rice vinegar, soy sauce, sesame oil, minced garlic, grated ginger, and red chili flakes.
- After 10 minutes, rinse the cucumber slices under cold water and pat them dry with a paper towel.
