Ingredients

  • Chinese cucumbers - 200 grams
  • Salt - 1 teaspoon
  • Rice vinegar - 60 ml
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic cloves - 2, minced
  • Fresh ginger - 1 teaspoon, grated
  • Red chili flakes - 1/2 teaspoon
  • Green onions - 2, chopped

Steps

  1. Wash the Chinese cucumbers and cut them into thin slices or sticks.
  2. In a bowl, sprinkle the salt over the cucumber slices and let them sit for 10 minutes to draw out excess moisture.
  3. In another bowl, combine the rice vinegar, soy sauce, sesame oil, minced garlic, grated ginger, and red chili flakes.
  4. After 10 minutes, rinse the cucumber slices under cold water and pat them dry with a paper towel.
  5. Add the cucumber slices to the vinegar mixture and stir well to coat.
  6. Let the pickles marinate for at least 5 minutes before serving, or refrigerate for up to 24 hours for more intense flavor.
  7. Garnish with chopped green onions before serving.
