  • Shiitake mushrooms - 150 grams, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Vegetable broth - 150 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by preparing the cauliflower rice. Remove the leaves and stem from the cauliflower and cut it into florets. Using a food processor, pulse the florets until they resemble rice grains.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced shiitake mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and browned.
