  • Ground pork - 250 grams
  • Egg - 1 large
  • Green onion - 2 tablespoons, finely chopped
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (or coconut aminos for keto) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Almond flour - 30 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cauliflower rice - 200 grams, for serving
  • Soy sauce - for drizzling (optional)

Steps

  1. In a large mixing bowl, combine ground pork, egg, green onion, garlic, ginger, soy sauce, sesame oil, almond flour, salt, and black pepper.
  2. Mix the ingredients until well combined, then shape the mixture into 12 equal-sized meatballs.
  3. Heat a non-stick skillet over medium heat and add a little oil to prevent sticking.
  4. Add the meatballs to the skillet and cook for about 5-7 minutes, turning occasionally, until they are browned and cooked through.
  5. While the meatballs are cooking, steam the cauliflower rice until tender, about 5-7 minutes.
  6. Serve the meatballs over the cauliflower rice, drizzled with extra soy sauce if desired, and garnish with sesame seeds.
