Ingredients

  • Almond flour - 100g
  • Coconut flour - 30g
  • Baking powder - 1 tsp
  • Erythritol - 30g
  • Ground cinnamon - 1/2 tsp
  • Salt - 1/4 tsp
  • Egg - 1 large
  • Unsweetened almond milk - 60ml
  • Vanilla extract - 1 tsp
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, baking powder, erythritol, ground cinnamon, and salt.
  2. In a separate bowl, whisk together the egg, almond milk, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Let the dough rest for 5 minutes, then shape it into small donut rings or balls.
  5. In a deep pan, heat coconut oil over medium heat until hot (about 180°C).
  6. Carefully drop the formed donuts into the hot oil, frying in batches to avoid overcrowding.
  7. Fry for about 2-3 minutes on each side or until golden brown and crispy.
  8. Remove donuts from the oil and place them on a paper towel to drain excess oil.
  9. Serve warm, optionally dusted with a little extra erythritol and cinnamon.
