- Chicken breast - 250 grams, diced
- Cauliflower - 300 grams, riced
- Eggs - 2 large
- Green onions - 2 stalks, chopped
- Bell pepper - 1 medium, diced
- Carrots - 50 grams, finely diced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Push the chicken to one side of the skillet and add the minced garlic and ginger. Sauté for 1 minute until fragrant.
- Add the diced bell pepper and carrots to the skillet. Cook for another 3-4 minutes until the vegetables are slightly tender.
- Stir in the riced cauliflower and mix everything together. Sauté for about 5 minutes until the cauliflower is tender.
- Create space in the skillet and crack the eggs into the empty space. Scramble them until fully cooked, then mix them into the rice mixture.
- Pour in the soy sauce and sesame oil, stirring well to combine. Cook for an additional 2 minutes.
- Remove from heat and stir in the chopped green onions. Adjust seasoning if necessary, then serve hot.
