- Shiitake mushrooms - 50 grams, sliced
- Eggs - 2 large
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, sliced
- Lettuce leaves (for wrapping) - 4 large
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - optional, to taste
Steps
- In a skillet over medium heat, add sesame oil and sauté minced garlic and grated ginger until fragrant, about 1 minute.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the sliced shiitake mushrooms and shredded cabbage, cooking for an additional 3-4 minutes until the cabbage is tender.
- Add soy sauce, salt, black pepper, and red chili flakes (if using) to the skillet, mixing well to combine.
- In a separate bowl, beat the eggs and pour them into the skillet, stirring gently to scramble them in with the beef and vegetables until fully cooked, about 2-3 minutes.
- Remove from heat and stir in sliced green onions.
- To serve, spoon the mixture into large lettuce leaves, wrapping them like a burrito.
