- Cauliflower rice - 300 grams
- Ground beef - 200 grams
- Eggs - 2 large
- Soy sauce (or coconut aminos) - 2 tablespoons
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Sesame oil - 1 tablespoon
- Butter - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red bell pepper - 50 grams, diced
- Carrots - 50 grams, diced (optional for low-carb)
Steps
- Heat butter in a large skillet over medium heat and add minced garlic and ginger, sautéing until fragrant (about 1 minute).
- Add the ground beef to the skillet, season with salt and pepper, and cook until browned and fully cooked, breaking it apart with a spatula.
- Stir in the diced red bell pepper and carrots (if using) and cook for another 2-3 minutes until softened.
- Push the beef mixture to one side of the skillet and crack the eggs into the empty side, scrambling them until fully cooked.
- Add the cauliflower rice to the skillet and mix everything together, followed by adding the soy sauce and sesame oil.
- Stir in the chopped green onions and cook for an additional 3-5 minutes until the cauliflower rice is heated through and slightly tender.
