Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 100 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Soy sauce (or coconut aminos) - 1 tablespoon
  • Ground ginger - 1/2 teaspoon
  • Green onions - 2, chopped
  • Bell pepper - 50 grams, diced
  • Cooked chicken breast - 100 grams, shredded
  • Sesame oil - 1 teaspoon
  • Red chili flakes - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Rinse and chop the cauliflower into florets, then steam until tender, about 5-7 minutes.
  3. Once steamed, drain and let the cauliflower cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the drained cauliflower, mozzarella cheese, almond flour, egg, garlic powder, onion powder, soy sauce, and ground ginger. Mix until well combined.
  5. Spread the mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  7. While the crust is baking, heat sesame oil in a pan over medium heat. Add diced bell pepper and shredded chicken, stir-frying for about 3-5 minutes until heated through. Add chopped green onions and red chili flakes, then remove from heat.
  8. Once the crust is done, remove it from the oven and top it with the chicken and bell pepper mixture.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes until everything is heated through.
  10. Garnish with fresh cilantro before slicing and serving.
