- Cauliflower - 300 grams
- Shredded mozzarella cheese - 100 grams
- Almond flour - 30 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Soy sauce (or coconut aminos) - 1 tablespoon
- Ground ginger - 1/2 teaspoon
- Green onions - 2, chopped
- Bell pepper - 50 grams, diced
- Cooked chicken breast - 100 grams, shredded
- Sesame oil - 1 teaspoon
- Red chili flakes - to taste
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- Rinse and chop the cauliflower into florets, then steam until tender, about 5-7 minutes.
- Once steamed, drain and let the cauliflower cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the drained cauliflower, mozzarella cheese, almond flour, egg, garlic powder, onion powder, soy sauce, and ground ginger. Mix until well combined.
- Spread the mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, heat sesame oil in a pan over medium heat. Add diced bell pepper and shredded chicken, stir-frying for about 3-5 minutes until heated through. Add chopped green onions and red chili flakes, then remove from heat.
- Once the crust is done, remove it from the oven and top it with the chicken and bell pepper mixture.
- Return the pizza to the oven and bake for an additional 5-7 minutes until everything is heated through.
