Ingredients
- Cauliflower - 300 grams
- Egg - 2 large
- Green onion - 2 tablespoons, chopped
- Carrot - 50 grams, diced
- Red bell pepper - 50 grams, diced
- Garlic - 2 cloves, minced
- Soy sauce (or coconut aminos) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower, then chop it into florets.
- Pulse the cauliflower florets in a food processor until they resemble rice grains (about 5 seconds).
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced carrots and red bell pepper to the skillet and cook for 3-4 minutes until they soften.
- Stir in the cauliflower rice and cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Push the cauliflower mixture to one side of the skillet and crack the eggs on the other side. Scramble the eggs until fully cooked, then mix them into the cauliflower rice.
- Add the soy sauce, sesame oil, chopped green onions, salt, and black pepper. Stir well to combine and cook for an additional 2 minutes.
- Transfer the fried rice mixture to a baking dish and bake in the preheated oven for 10 minutes.
- Remove from the oven, let it cool slightly, and serve hot.
