Ingredients

  • Pork belly - 500 grams
  • Soy sauce (low sodium) - 60 ml
  • Rice vinegar - 30 ml
  • Sesame oil - 15 ml
  • Garlic (minced) - 4 cloves
  • Ginger (grated) - 1 tablespoon
  • Star anise - 1 whole
  • Cinnamon stick - 1
  • Water - 250 ml
  • Green onions (sliced) - 2 stalks
  • Red chili (sliced, optional) - 1

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a large oven-safe pot, heat sesame oil over medium-high heat. Add the pork belly pieces, skin-side down, and sear until browned on all sides.
  3. Remove the pork belly from the pot and set aside. In the same pot, add minced garlic, grated ginger, star anise, and cinnamon stick. Sauté for 1-2 minutes until fragrant.
  4. Pour in the soy sauce, rice vinegar, and water. Stir to combine and bring the mixture to a simmer.
  5. Return the pork belly to the pot, skin-side up. Cover the pot with a lid and transfer it to the preheated oven.
  6. Braise the pork belly for about 2 hours, until it is tender and the flavors have melded.
  7. Once done, remove the pot from the oven and let it rest for 10 minutes before slicing.
  8. Garnish with sliced green onions and red chili (if using) before serving.
