- Pork belly - 500 grams
- Soy sauce (low sodium) - 60 ml
- Rice vinegar - 30 ml
- Sesame oil - 15 ml
- Garlic (minced) - 4 cloves
- Ginger (grated) - 1 tablespoon
- Star anise - 1 whole
- Cinnamon stick - 1
- Water - 250 ml
- Green onions (sliced) - 2 stalks
- Red chili (sliced, optional) - 1
Steps
- Preheat your oven to 160°C (320°F).
- In a large oven-safe pot, heat sesame oil over medium-high heat. Add the pork belly pieces, skin-side down, and sear until browned on all sides.
- Remove the pork belly from the pot and set aside. In the same pot, add minced garlic, grated ginger, star anise, and cinnamon stick. Sauté for 1-2 minutes until fragrant.
- Pour in the soy sauce, rice vinegar, and water. Stir to combine and bring the mixture to a simmer.
- Return the pork belly to the pot, skin-side up. Cover the pot with a lid and transfer it to the preheated oven.
- Braise the pork belly for about 2 hours, until it is tender and the flavors have melded.
- Once done, remove the pot from the oven and let it rest for 10 minutes before slicing.
- Garnish with sliced green onions and red chili (if using) before serving.
