Ingredients

  • Beef flank steak - 300 grams
  • Soy sauce (or coconut aminos) - 60 ml
  • Rice vinegar - 15 ml
  • Sesame oil - 10 ml
  • Garlic powder - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Erythritol (or preferred keto sweetener) - 1 tablespoon

Steps

  1. Slice the beef flank steak against the grain into thin strips, about 0.5 cm thick.
  2. In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, garlic powder, ground ginger, black pepper, red pepper flakes, and erythritol to create the marinade.
  3. Add the sliced beef to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 3 hours, or overnight for best flavor.
  4. Preheat your dehydrator or oven to 70°C (160°F). If using an oven, line a baking sheet with parchment paper and place a wire rack on top.
  5. Remove the beef from the marinade and pat dry with paper towels to remove excess moisture.
  6. Arrange the beef strips in a single layer on the dehydrator trays or on the wire rack, making sure they do not overlap.
  7. Dehydrate the beef for 4-6 hours or until the jerky is dry but still slightly pliable. If using an oven, check every hour until the desired texture is achieved.
