- Beef flank steak - 300 grams
- Soy sauce (or coconut aminos) - 60 ml
- Rice vinegar - 15 ml
- Sesame oil - 10 ml
- Garlic powder - 1 teaspoon
- Ground ginger - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Erythritol (or preferred keto sweetener) - 1 tablespoon
Steps
- Slice the beef flank steak against the grain into thin strips, about 0.5 cm thick.
- In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, garlic powder, ground ginger, black pepper, red pepper flakes, and erythritol to create the marinade.
- Add the sliced beef to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 3 hours, or overnight for best flavor.
- Preheat your dehydrator or oven to 70°C (160°F). If using an oven, line a baking sheet with parchment paper and place a wire rack on top.
- Remove the beef from the marinade and pat dry with paper towels to remove excess moisture.
- Arrange the beef strips in a single layer on the dehydrator trays or on the wire rack, making sure they do not overlap.
- Dehydrate the beef for 4-6 hours or until the jerky is dry but still slightly pliable. If using an oven, check every hour until the desired texture is achieved.
