Ingredients

  • Almond milk - 400 ml
  • Agar-agar powder - 2 g
  • Erythritol - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Almond extract - 1/2 teaspoon
  • Salt - a pinch
  • Sliced almonds - for garnish

Steps

  1. In a saucepan, combine the almond milk and agar-agar powder. Stir well to avoid lumps.
  2. Heat the mixture over medium heat, stirring constantly until the agar-agar is fully dissolved, about 5 minutes.
  3. Add the erythritol, vanilla extract, almond extract, and a pinch of salt. Mix until fully combined and the sweetener is dissolved.
  4. Remove the saucepan from heat and pour the mixture into two serving molds or bowls.
  5. Let the jelly cool at room temperature for about 10 minutes, then refrigerate for at least 1 hour until set.
  6. Once set, gently run a knife around the edges of the molds to release the jelly. Invert onto a plate if desired.
