- Pork tenderloin - 300 grams
- Bell pepper (red or green) - 1 medium, sliced
- Onion - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Gluten-free soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Chopped scallions - for garnish
Steps
- Slice the pork tenderloin into thin strips and marinate with gluten-free soy sauce, rice vinegar, cornstarch, salt, and black pepper for 15 minutes.
- Heat vegetable oil in a wok or large frying pan over medium-high heat.
- Add the marinated pork to the pan and stir-fry for about 5-7 minutes until browned and cooked through.
- Remove the pork from the pan and set aside.
- In the same pan, add sliced onion, bell pepper, garlic, and ginger; stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Return the pork to the pan, add water and sesame oil, and stir to combine, cooking for an additional 2-3 minutes.
- Taste and adjust seasoning if necessary, then serve hot, garnished with chopped scallions.
