Ingredients

  • Pork tenderloin - 300 grams
  • Bell pepper (red or green) - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Gluten-free soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Water - 100 ml
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Chopped scallions - for garnish

Steps

  1. Slice the pork tenderloin into thin strips and marinate with gluten-free soy sauce, rice vinegar, cornstarch, salt, and black pepper for 15 minutes.
  2. Heat vegetable oil in a wok or large frying pan over medium-high heat.
  3. Add the marinated pork to the pan and stir-fry for about 5-7 minutes until browned and cooked through.
  4. Remove the pork from the pan and set aside.
  5. In the same pan, add sliced onion, bell pepper, garlic, and ginger; stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  6. Return the pork to the pan, add water and sesame oil, and stir to combine, cooking for an additional 2-3 minutes.
  7. Taste and adjust seasoning if necessary, then serve hot, garnished with chopped scallions.
