Ingredients

  • Wheat Noodles - 150 grams
  • Firm Tofu - 100 grams, crumbled
  • Carrot - 1 medium, julienned
  • Cabbage - 100 grams, finely shredded
  • Green Onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy Sauce - 2 tablespoons
  • Sesame Oil - 1 tablespoon
  • Rice Vinegar - 1 tablespoon
  • Black Pepper - 1/2 teaspoon
  • Chili Oil - 1 teaspoon (optional)
  • Fresh Cilantro - a handful, chopped (for garnish)

Steps

  1. Cook the wheat noodles according to the package instructions, then drain and set aside.
  2. In a large pan, heat the sesame oil over medium heat and add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the crumbled tofu to the pan, cooking for 5-7 minutes until slightly golden.
  4. Stir in the julienned carrot and shredded cabbage, cooking for another 3-4 minutes until the vegetables are tender.
  5. Pour in the soy sauce, rice vinegar, and black pepper, stirring well to combine all ingredients.
  6. Add the cooked noodles to the pan, tossing everything together until heated through.
  7. If desired, drizzle with chili oil for added spice and mix well.
  8. Serve hot, garnished with chopped green onions and fresh cilantro.
