Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Ground chicken - 150 grams
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Carrot - 1 medium, julienned
  • Spinach - 100 grams
  • Chicken broth - 800 ml
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - a handful, for garnish

Steps

  1. In a mixing bowl, combine the flour and water to form a dough. Knead for about 5-10 minutes until smooth, then cover and let it rest for 30 minutes.
  2. In another bowl, mix the ground chicken, 1 chopped green onion, garlic, ginger, soy sauce, sesame oil, salt, and pepper until well combined.
  3. On a floured surface, roll out the dough to about 2 mm thickness and cut it into squares (around 8 cm x 8 cm).
  4. Place a small spoonful of the chicken mixture in the center of each square, fold over to form a triangle, and pinch the edges to seal.
  5. Bring the chicken broth to a simmer in a pot. Add the julienned carrots and cook for 5 minutes.
  6. Add the Jiaozi dumpling noodles to the broth and cook for another 5-7 minutes until they float to the surface.
  7. Stir in the spinach and cook for an additional 1-2 minutes until wilted.
  8. Serve the soup hot, garnished with the remaining green onions and cilantro.
