Ingredients

  • All-purpose flour - 150 grams
  • Water - 60 milliliters
  • Salt - 1/4 teaspoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Bell pepper - 1/2, thinly sliced
  • Green onions - 2, chopped
  • Cilantro - a handful, chopped
  • Red chili flakes - 1/2 teaspoon (optional)
  • Vegetable broth - 250 milliliters

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 10 minutes.
  3. While the dough rests, heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, stirring until fragrant, about 1 minute.
  4. Add the julienned carrot and sliced bell pepper to the skillet. Stir-fry for about 5 minutes until the vegetables are tender.
  5. Pour in the vegetable broth and soy sauce, bringing the mixture to a gentle simmer. Optionally add red chili flakes for heat.
  6. Roll out the rested dough on a floured surface until thin. Cut into strips or desired noodle shapes.
  7. Add the noodles to the skillet, cooking for an additional 5-7 minutes until they are fully cooked and have absorbed some sauce.
  8. Serve the Jiaozi Mian hot, garnished with chopped green onions and cilantro.
