Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Salt - 1/2 teaspoon
  • Firm tofu - 100 grams, crumbled
  • Shiitake mushrooms - 50 grams, finely chopped
  • Carrot - 1 small, grated
  • Green onions - 2, finely chopped
  • Soy sauce (Kosher) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Cooking oil - for frying (optional)

Steps

  1. In a bowl, mix the flour and salt, then gradually add the warm water while stirring, until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  3. In another bowl, combine the crumbled tofu, shiitake mushrooms, grated carrot, green onions, soy sauce, sesame oil, ginger, and garlic. Mix well to combine.
  4. After the dough has rested, divide it into two equal portions and roll each into a log. Cut each log into 10 equal pieces.
  5. Roll each piece into a thin circle about 8 cm in diameter.
  6. Place a spoonful of the filling in the center of each dumpling wrapper. Fold the wrapper over to create a half-moon shape and pinch the edges to seal tightly.
  7. In a steamer, add water and place the dumplings in a single layer, leaving space between them. Steam for 15 minutes.
  8. For pan-fried dumplings, heat a non-stick skillet with a little oil over medium heat. Add the steamed dumplings and fry until the bottoms are golden brown, about 3-5 minutes.
  9. Serve hot with additional soy sauce or a dipping sauce of your choice.
