Ingredients
- Jasmine rice - 150g
- Water - 300ml
- Soy sauce (gluten-free) - 3 tablespoons
- Brown sugar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Carrot - 1 medium, diced
- Green peas - 100g (fresh or frozen)
- Spring onion - 2, chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Sesame seeds - 1 tablespoon, toasted
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 300ml of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat sesame oil in a large skillet over medium heat.
- Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Stir in the diced carrot and green peas, cooking for 3-4 minutes until tender.
- In a small bowl, mix the soy sauce and brown sugar until the sugar is dissolved.
- Add the cooked rice to the skillet with the vegetables, followed by the soy sauce mixture. Stir well to combine all ingredients and heat through for an additional 2-3 minutes.
- Remove from heat and garnish with chopped spring onion and toasted sesame seeds before serving.
