Ingredients

  • Jasmine rice - 150g
  • Water - 300ml
  • Soy sauce (gluten-free) - 3 tablespoons
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Carrot - 1 medium, diced
  • Green peas - 100g (fresh or frozen)
  • Spring onion - 2, chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and 300ml of water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  4. While the rice is cooking, heat sesame oil in a large skillet over medium heat.
  5. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  6. Stir in the diced carrot and green peas, cooking for 3-4 minutes until tender.
  7. In a small bowl, mix the soy sauce and brown sugar until the sugar is dissolved.
  8. Add the cooked rice to the skillet with the vegetables, followed by the soy sauce mixture. Stir well to combine all ingredients and heat through for an additional 2-3 minutes.
  9. Remove from heat and garnish with chopped spring onion and toasted sesame seeds before serving.
