Ingredients
- Sweet rice (glutinous rice) - 150g
- Water - 300ml
- Coconut sugar - 30g
- Salt - 1/4 tsp
- Coconut milk - 100ml
- Chopped walnuts - 30g
- Chopped dates - 30g
- Dried goji berries - 20g
- Cinnamon powder - 1/2 tsp
- Vanilla extract - 1/2 tsp
Steps
- Rinse the sweet rice in cold water until the water runs clear, then soak it in water for 4-6 hours or overnight.
- Drain the soaked rice and place it in a pot with 300ml of fresh water, add salt, and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 30 minutes until the rice is tender and the water is absorbed.
- In a small saucepan, combine coconut milk, coconut sugar, cinnamon, and vanilla extract. Heat gently until the sugar dissolves, stirring occasionally.
- Once the rice is cooked, fluff it with a fork and pour the coconut milk mixture over it. Stir to combine thoroughly.
- Fold in the chopped walnuts, dates, and goji berries gently.
- Serve warm, garnished with extra walnuts or goji berries if desired.
