Ingredients

  • Sweet rice (glutinous rice) - 150g
  • Water - 300ml
  • Coconut sugar - 30g
  • Salt - 1/4 tsp
  • Coconut milk - 100ml
  • Chopped walnuts - 30g
  • Chopped dates - 30g
  • Dried goji berries - 20g
  • Cinnamon powder - 1/2 tsp
  • Vanilla extract - 1/2 tsp

Steps

  1. Rinse the sweet rice in cold water until the water runs clear, then soak it in water for 4-6 hours or overnight.
  2. Drain the soaked rice and place it in a pot with 300ml of fresh water, add salt, and bring to a boil.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for 30 minutes until the rice is tender and the water is absorbed.
  4. In a small saucepan, combine coconut milk, coconut sugar, cinnamon, and vanilla extract. Heat gently until the sugar dissolves, stirring occasionally.
  5. Once the rice is cooked, fluff it with a fork and pour the coconut milk mixture over it. Stir to combine thoroughly.
  6. Fold in the chopped walnuts, dates, and goji berries gently.
  7. Serve warm, garnished with extra walnuts or goji berries if desired.
