Ingredients

  • Jasmine rice - 150 grams
  • Fresh crab (cleaned and chopped) - 200 grams
  • Chicken broth - 300 ml
  • Garlic (minced) - 2 cloves
  • Ginger (minced) - 1 teaspoon
  • Spring onions (chopped) - 2 tablespoons
  • Soy sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro (for garnish) - a handful

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
  3. Add the chopped crab to the pot and stir-fry for about 3-4 minutes until slightly cooked. Remove the crab and set aside.
  4. Drain the soaked rice and add it to the pot, stirring for 1-2 minutes to toast the rice lightly.
  5. Pour in the chicken broth, add soy sauce, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover the pot.
  6. Cook for about 15 minutes or until the rice has absorbed most of the liquid.
  7. Add the partially cooked crab and chopped spring onions to the rice, gently folding them in. Cover and cook for an additional 5 minutes.
  8. Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork.
  9. Serve hot, garnished with fresh cilantro.
