- Jasmine rice - 150 grams
- Fresh crab (cleaned and chopped) - 200 grams
- Chicken broth - 300 ml
- Garlic (minced) - 2 cloves
- Ginger (minced) - 1 teaspoon
- Spring onions (chopped) - 2 tablespoons
- Soy sauce (gluten-free) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro (for garnish) - a handful
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant.
- Add the chopped crab to the pot and stir-fry for about 3-4 minutes until slightly cooked. Remove the crab and set aside.
- Drain the soaked rice and add it to the pot, stirring for 1-2 minutes to toast the rice lightly.
- Pour in the chicken broth, add soy sauce, salt, and black pepper. Bring to a boil, then reduce the heat to low and cover the pot.
- Cook for about 15 minutes or until the rice has absorbed most of the liquid.
- Add the partially cooked crab and chopped spring onions to the rice, gently folding them in. Cover and cook for an additional 5 minutes.
- Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork.
- Serve hot, garnished with fresh cilantro.
