- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pickled vegetables - 50 grams (optional)
- Sriracha or chili sauce - to taste (optional)
Steps
- In a mixing bowl, combine the all-purpose flour and water to create a smooth batter. Let it sit for 10 minutes.
- Add salt, black pepper, and half of the chopped green onions to the batter, mixing well.
- Heat a non-stick skillet over medium heat and lightly grease it with sesame oil.
- Pour a ladleful of the batter into the skillet, swirling it to create a thin, even layer.
- Cook for about 1-2 minutes or until the bottom is lightly golden and the top is set.
- Crack an egg onto the crepe and spread it gently across the surface. Sprinkle the remaining green onions and chopped coriander on top.
- Cook for another 1-2 minutes until the egg is cooked through.
- Carefully fold the crepe in half and transfer it to a plate. If desired, add pickled vegetables and Sriracha or chili sauce before folding.
- Repeat with the remaining batter and fillings for the second crepe. Serve warm.
