Ingredients

  • All-purpose flour - 100 grams
  • Water - 250 ml
  • Eggs - 2 large
  • Green onions - 2, finely chopped
  • Coriander leaves - a handful, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pickled vegetables - 50 grams (optional)
  • Sriracha or chili sauce - to taste (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour and water to create a smooth batter. Let it sit for 10 minutes.
  2. Add salt, black pepper, and half of the chopped green onions to the batter, mixing well.
  3. Heat a non-stick skillet over medium heat and lightly grease it with sesame oil.
  4. Pour a ladleful of the batter into the skillet, swirling it to create a thin, even layer.
  5. Cook for about 1-2 minutes or until the bottom is lightly golden and the top is set.
  6. Crack an egg onto the crepe and spread it gently across the surface. Sprinkle the remaining green onions and chopped coriander on top.
  7. Cook for another 1-2 minutes until the egg is cooked through.
  8. Carefully fold the crepe in half and transfer it to a plate. If desired, add pickled vegetables and Sriracha or chili sauce before folding.
  9. Repeat with the remaining batter and fillings for the second crepe. Serve warm.
