Steps
- In a mixing bowl, combine the all-purpose flour, cornstarch, water, salt, and black pepper. Whisk until smooth and let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it with sesame oil.
- Pour a ladleful of the batter into the skillet, swirling it to create a thin, even layer. Cook for about 2 minutes until the edges start to lift.
- Crack an egg onto the crepe and gently spread it out, then sprinkle with chopped spring onions and cilantro.
- Cook for another 1-2 minutes until the egg is set, then add soy sauce and any optional fillings such as tofu, ham, or pickled vegetables.
