- All-purpose flour - 100g
- Rice flour - 50g
- Water - 300ml
- Soy milk - 100ml
- Salt - 1/4 tsp
- Turmeric powder - 1/2 tsp
- Green onions - 2, finely chopped
- Carrot - 1 small, grated
- Cucumber - 1 small, julienned
- Fresh cilantro - a handful, chopped
- Hoisin sauce - 2 tbsp
- Chili sauce - 1 tbsp
- Peanut butter - 1 tbsp
- Oil - for cooking
Steps
- In a mixing bowl, combine the all-purpose flour, rice flour, water, soy milk, salt, and turmeric powder. Whisk until smooth to form a batter.
- Heat a non-stick skillet over medium heat and lightly grease it with oil.
- Pour a ladleful of the batter into the skillet, swirling to create a thin, even layer. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown.
- Flip the crepe and sprinkle some chopped green onions, grated carrot, and a few sprigs of cilantro on top. Cook for another minute.
- Transfer the crepe to a plate and spread a tablespoon of hoisin sauce and a drizzle of chili sauce on top. Add a spoonful of peanut butter for extra flavor.
- Add the julienned cucumber on top, then fold the crepe in half or roll it up. Repeat with the remaining batter to make a second Jianbing.
- Serve immediately while hot, with extra sauce on the side if desired.
