Ingredients

  • All-purpose flour - 100g
  • Rice flour - 50g
  • Water - 300ml
  • Soy milk - 100ml
  • Salt - 1/4 tsp
  • Turmeric powder - 1/2 tsp
  • Green onions - 2, finely chopped
  • Carrot - 1 small, grated
  • Cucumber - 1 small, julienned
  • Fresh cilantro - a handful, chopped
  • Hoisin sauce - 2 tbsp
  • Chili sauce - 1 tbsp
  • Peanut butter - 1 tbsp
  • Oil - for cooking

Steps

  1. In a mixing bowl, combine the all-purpose flour, rice flour, water, soy milk, salt, and turmeric powder. Whisk until smooth to form a batter.
  2. Heat a non-stick skillet over medium heat and lightly grease it with oil.
  3. Pour a ladleful of the batter into the skillet, swirling to create a thin, even layer. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown.
  4. Flip the crepe and sprinkle some chopped green onions, grated carrot, and a few sprigs of cilantro on top. Cook for another minute.
  5. Transfer the crepe to a plate and spread a tablespoon of hoisin sauce and a drizzle of chili sauce on top. Add a spoonful of peanut butter for extra flavor.
  6. Add the julienned cucumber on top, then fold the crepe in half or roll it up. Repeat with the remaining batter to make a second Jianbing.
  7. Serve immediately while hot, with extra sauce on the side if desired.
