Ingredients

  • All-purpose flour - 100g
  • Water - 150ml
  • Egg - 1 large
  • Spring onions - 2, finely chopped
  • Carrot - 1 small, grated
  • Cucumber - 1/2, julienned
  • Fresh cilantro - a handful, chopped
  • Soy sauce - 1 tablespoon
  • Hoisin sauce - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - a pinch
  • Black pepper - a pinch

Steps

  1. In a mixing bowl, combine the all-purpose flour and a pinch of salt. Gradually add water while whisking until you have a smooth batter.
  2. In a separate bowl, beat the egg with a pinch of salt and black pepper. Stir in the chopped spring onions and grated carrot.
  3. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil. Pour half of the batter into the skillet, swirling to create a thin pancake. Cook for 2-3 minutes until the edges lift and the bottom is golden brown.
  4. Pour half of the egg mixture over the pancake, spreading it evenly. Cook for another 1-2 minutes until the egg is set, then flip the pancake and cook for another minute. Transfer to a plate and repeat with the remaining batter and egg mixture to make the second pancake.
  5. Once both pancakes are ready, spread a tablespoon of hoisin sauce and a tablespoon of soy sauce on each pancake. Layer with julienned cucumber and chopped cilantro.
  6. Fold the pancake over the fillings, creating a burger shape. Cut in half and serve immediately.
