- All-purpose flour - 100g
- Water - 150ml
- Egg - 1 large
- Spring onions - 2, finely chopped
- Carrot - 1 small, grated
- Cucumber - 1/2, julienned
- Fresh cilantro - a handful, chopped
- Soy sauce - 1 tablespoon
- Hoisin sauce - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - a pinch
- Black pepper - a pinch
Steps
- In a mixing bowl, combine the all-purpose flour and a pinch of salt. Gradually add water while whisking until you have a smooth batter.
- In a separate bowl, beat the egg with a pinch of salt and black pepper. Stir in the chopped spring onions and grated carrot.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil. Pour half of the batter into the skillet, swirling to create a thin pancake. Cook for 2-3 minutes until the edges lift and the bottom is golden brown.
- Pour half of the egg mixture over the pancake, spreading it evenly. Cook for another 1-2 minutes until the egg is set, then flip the pancake and cook for another minute. Transfer to a plate and repeat with the remaining batter and egg mixture to make the second pancake.
- Once both pancakes are ready, spread a tablespoon of hoisin sauce and a tablespoon of soy sauce on each pancake. Layer with julienned cucumber and chopped cilantro.
- Fold the pancake over the fillings, creating a burger shape. Cut in half and serve immediately.
