Ingredients

  • Eggs - 2 large

  • Green onions - 2 stalks, finely chopped
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Fresh cilantro - a small handful, chopped
  • Pickled radish - 50 grams, julienned
  • Sriracha sauce - to taste

Steps

  1. In a mixing bowl, combine the flour and water to create a smooth batter. Add a pinch of kosher salt and mix well.
  2. Heat a non-stick skillet over medium heat and lightly grease it with sesame oil.
  3. Pour about 1/2 cup of the batter into the skillet, swirling it to create a thin, even layer. Cook for 1-2 minutes until the edges start to lift.
  4. Crack one egg directly onto the crepe and spread it evenly with a spatula. Sprinkle chopped green onions and cilantro on top.
  5. Cook for another 1-2 minutes until the egg is set, then gently fold the crepe in half and cook for an additional minute.
  6. Carefully transfer the folded Jian Bing to a plate and drizzle with soy sauce and Sriracha sauce. Add pickled radish inside for extra flavor.
  7. Repeat the process with the remaining batter and ingredients to make a second Jian Bing. Serve warm.
