Ingredients
- All-purpose flour - 100 grams
- Water - 250 milliliters
- Eggs - 2 large
- Kosher salt - 1/2 teaspoon
- Green onions - 2 stalks, finely chopped
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Fresh cilantro - a small handful, chopped
- Pickled radish - 50 grams, julienned
- Sriracha sauce - to taste
Steps
- In a mixing bowl, combine the flour and water to create a smooth batter. Add a pinch of kosher salt and mix well.
- Heat a non-stick skillet over medium heat and lightly grease it with sesame oil.
- Pour about 1/2 cup of the batter into the skillet, swirling it to create a thin, even layer. Cook for 1-2 minutes until the edges start to lift.
- Crack one egg directly onto the crepe and spread it evenly with a spatula. Sprinkle chopped green onions and cilantro on top.
- Cook for another 1-2 minutes until the egg is set, then gently fold the crepe in half and cook for an additional minute.
- Carefully transfer the folded Jian Bing to a plate and drizzle with soy sauce and Sriracha sauce. Add pickled radish inside for extra flavor.
- Repeat the process with the remaining batter and ingredients to make a second Jian Bing. Serve warm.
