Ingredients

  • Cauliflower rice - 2 cups
  • Chicken breast - 200 grams, diced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Red chili flakes - 1/2 teaspoon (optional)
  • Fresh cilantro - for garnish

Steps

  1. In a large bowl, combine the diced chicken, garlic, ginger, coconut aminos, black pepper, and red chili flakes. Marinate for 15 minutes.
  2. While the chicken is marinating, prepare the vegetables by dicing the red bell pepper, julienning the carrot, and slicing the green onion.
  3. Heat a non-stick skillet over medium heat and add the sesame oil. Once hot, add the marinated chicken and sauté for about 5-7 minutes until the chicken is cooked through.
  4. Add the red bell pepper and carrot to the skillet, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  5. In a separate pot, steam the cauliflower rice for about 5-7 minutes until heated through.
  6. Once everything is cooked, serve the cauliflower rice topped with the chicken and vegetable mixture, garnished with sliced green onions and fresh cilantro.
