  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Scallions - 2, chopped
  • Hunan chili paste - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 teaspoon
  • Water - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste

Steps

  1. In a medium bowl, combine the sliced beef with cornstarch, soy sauce, and black pepper. Mix well and let it marinate for 10 minutes.
  2. Heat a wok or large skillet over medium-high heat and add vegetable oil. Once hot, add the marinated beef and stir-fry for 3-4 minutes until browned and cooked through. Remove beef from the pan and set aside.
  3. In the same pan, add minced garlic, ginger, and scallions. Stir-fry for about 30 seconds until fragrant.
  4. Add the sliced red and green bell peppers and julienned carrot to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the cooked beef to the pan and add Hunan chili paste, oyster sauce, sesame oil, and water. Stir everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Taste and adjust the seasoning with salt if necessary. Serve hot with steamed rice or quinoa.
