Ingredients

  • Chinese eggplant - 2 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Chili paste - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat your grill to medium-high heat.
  2. Wash and slice the eggplants lengthwise into quarters, keeping the skin on.
  3. In a bowl, mix together the olive oil, gluten-free soy sauce, chili paste, minced garlic, grated ginger, and sesame oil.
  4. Brush the marinade generously over the cut sides of the eggplant slices.
  5. Let the eggplant marinate for about 15 minutes to soak up the flavors.
  6. Place the marinated eggplants cut-side down on the hot grill.
  7. Grill for about 6-8 minutes until the eggplant is tender and has nice grill marks.
  8. Flip the eggplants and grill for an additional 4-5 minutes.
  9. Remove from the grill, sprinkle with chopped green onions and sesame seeds before serving.
