Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green onions - 2, chopped
  • Hunan chili sauce - 3 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine with 300 ml of water in a pot and bring to a boil.
  2. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the rice is fluffy.
  3. While the rice is cooking, heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
  4. Add minced garlic and ginger to the skillet, sauté for about 1 minute until fragrant.
  5. Add diced red bell pepper and carrot to the skillet, cooking for 5-7 minutes until tender.
  6. Stir in the cooked rice, Hunan chili sauce, gluten-free soy sauce, salt, and pepper, mixing well to combine all ingredients.
  7. Cook for an additional 3-4 minutes, allowing the flavors to meld together.
  8. Remove from heat, garnish with chopped green onions and sesame seeds before serving.
